Abstract
The study found the appropriate parameters for the extraction of chlorophyll from ricegrass supplemented with mint leaves. Products extracted from ricegrass contribute to chlorophyll at a more reasonable price than other raw materials. First, survey the ratio of raw materials: solvent (1:5, 1:10, 1:15, 1:20, 1:25) to obtain chlorophyll extraction efficiency at 1:20 ratio, reaching 27, 33 g/ml. Using ultrasonic wavelengths (Degas, Soft, Normal) in the extraction process, the chlorophyll content was higher than that of the control sample. The ratio of ingredients: 75/25 mint leaves was the most appropriate compared to the ratios (55/45, 65/35, 75/25, 85/15). To ensure the sensory value of the extract, the appropriate content of added sugar in the rice grass solution was 7% compared to the added sugar content (5%, 6%, 7%, 8%).. Keywords: ricegrass, chlorophyll, mint leaf, chlorophyll, ultrasonic extraction.
